    This is a basic muffin mix that can be modified for your tastes/purposes. I make bread in a loaf pan because it's easier than making individual muffins. I've used this mix for banana and banana nut bread, carrot bread, blueberry bread and have several other ideas to try. And the gluten-free grandkids love it.

    My whole family loved the blueberry muffins I made with this mix. It's a good bargain, too. It worked well, also, to put a few sliced almonds atop each one before baking. Awesome!
